I Didn’t Think I’d Enjoy Cauliflower Rice

I have to admit, I am dubious about foods that are trying to be something else. When we were in the throws of lockdown though, trying new things as other items aren’t available was kind of important. Getting what we could when we could get it was vital. This is when I ordered some frozen cauliflower rice as ‘normal’ rice was out of stock everywhere.

What Is Cauliflower Rice?

If you don’t know what cauliflower rice is, it’s a low carb substitute for regular rice. You can use it in any dish that you’d usually use rice in, from stir fries to burritos. It’s fairly simple. It’s just cauliflower that has been grated or food processed into rice sized granules. Then cooked. The frozen stuff I bought you could simply microwave but it’s quiet expensive. You can make it from scratch for much less, so you’ll save money. It’s also a great way to make your food go further!

Cook it in a skilletĀ in a tiny bit of oil for a bit then pop a lid on so it steams for a few minutes. That’s it. It should be nice and tender. Honestly, you might be frowning at the thought but you can’t even tell the difference! It’s a great way to get more vegetables into your diet and it takes much less time to cook that traditional rice.

What Did I Serve It With?

I love a chilli con carne. To me, it’s comfort food for cold days. I usually use beef mince, make it medium in terms of spiciness and include plenty of sliced pepper and mixed beans. I had some turkey mince because beef mince was out of stock and I have to say, it was even better. Not only was the cauliflower rice light, the turkey mine made the chilli light too. It was delicious but there was no heaviness to the meal. Serve with a dollop of sour cream, a dollop of guacamole, a sprinkle of cheese and some tortilla chips. The latter are a must as you use them like spoons to scoop up your meal and enjoy a crispy bite.

If you haven’t tried cauliflower rice, you really should. Swap out the meat in your chilli too. Add some fun to your food and use purple cauliflower, the kids will love it! You can also use broccoli, carrots, sprouts, potatoes, squash and beetroot as rice substitutes. Delicious, nutritious and so easy to make!
